- 1 large onion, roughly chopped (about 1 1/2 cups)
- 1 green bell pepper, roughly chopped (about 1 cup)
- 1 red bell pepper, roughly chopped (about 1 cup)
- 1 large stalk celery, roughly chopped (about 3/4 cup)
- 3 tablespoons vegetable oil
- Kosher salt and freshly ground black pepper
- 3/4 cup (3 3/4 ounces) all-purpose flour
- 6 tablespoons unsalted butter, cut into cubes
- 3 medium cloves garlic, minced (about 1 tablespoon)
- 2 tablespoons tomato paste
- 1 tablespoon cajun seasoning
- 1 1/2 teaspoons smoked paprika
- 1/4 to 1/2 teaspoon cayenne pepper
- 3 cups homemade or store-bought low sodium chicken broth
- 12 ounces (1 can) ale (or substitute more low sodium chicken broth)
- 8 ounces fresh okra, cut into 1/2-inch pieces
- 1 1/2 pounds boneless, skinless, chicken thighs, trimmed of visible fat and cut into 2-inch pieces
- 2 green onions, chopped
- 4 to 6 cups cooked rice to serve on the side
- hot sauce to serve on the side
