Zapotec Pumpkin Seed Sauce
Ingredients
- 1 cup dried great northern beans
- 6 star anise pods
- 3⁄4 lb. or 3 cups whole pumpkin seeds with hulls
- 3 dried chiles de arbol, stems and seeds removed
- 2 cups Chicken Stock
- 1 1⁄2 oz. dried shrimp
- 1 medium onion, finely chopped
- 2 tbsp. crumbled, dried epazote
