- For the Meatballs:
- 4 slices bread, crusts removed
- 2 eggs
- 2 pounds 80/20 ground beef
- 1 1/2 tablespoons adobo seasoning (such as Goya), see note above
- 1/2 cup minced fresh parsley leaves
- Kosher salt and freshly ground black pepper
- Olive oil for frying
- Pasta and grated Parmesan cheese for serving
