- 15 basil leaves, shredded

- 4 teaspoons best-quality extra virgin olive oil
- 1 pound buffalo mozzarella
- 2 ripe tomatoes, cut into wedges (or a handful of cherry tomatoes)
- Maldon sea salt and black pepper for finishing
