Ingredients
- For the green beans
- 1 pound green beans, trimmed
- 2 tablespoons unrefined coconut oil or extra-virgin olive oil
- 1 teaspoon black mustard seeds
- 15 fresh curry leaves (optional but recommended)
- 1/2 teaspoon red pepper flakes
- 2 medium shallots, sliced
- 3 tablespoons unsweetened desiccated coconut or fresh/frozen coconut shavings
- 1 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon freshly ground black pepper, plus more to taste
- For garnish
- 1/4 cup (heaped) roasted unsalted peanuts, crushed or roughly chopped (see Author Notes)
- 1 bunch fresh cilantro, leaves and tender stems, chopped (see Author Notes)
- 1 lemon, zested then cut into wedges
