Ingredients
- 1/2 pound dry cannellini beans
- 1 onion
- 6 cloves of garlic
- 28 ounces chopped tomatoes (or crushed tomatoes)
- 1/4 pound chopped pancetta or bacon
- 3 carrots
- 3 celery stalks (get organic, celery is on the dirty dozen list because of pesticide residues)
- 1/2 cabbage, preferably savoy, but green is fine
- 1 bunch kale
- 1 parmesan rind
- 1 dried bay leaf
- 6 cups chicken stock
- 4 cups bread cubes
- 1 cup grated parmesan (for serving)
- 1/4 cup chopped parsley (for serving)
- olive oil
- salt, pepper, and crushed red pepper flakes
