Ingredients
- 1/2 cup dried tart or sour cherries
- 2 teaspoons pomegranate molasses
- 1/2 cup water
- 1 pound small eggplants
- 3 cloves garlic
- 1/2 teaspoon salt
- 1 tablespoon sweet paprika
- 1 pinch cayenne (to taste)
- 2-3 tablespoons olive oil
- 4 scallions, slivered, greens and all
- 1/2 cup toasted walnuts, chopped
- 1/2 cup parsley, chopped (I permit you to use curly leaves)
- Salad greens of choice
- 1 cup quinoa
- 2 cups water
- 1 tablespoon freshly squeezed lime juice
- 1/2 teaspoon pomegranate molasses
- 1 teaspoon Pedro Ximenez or Spanish sherry vinegar
- 1/4 cup preferred salad oil
- 1 pinch sugar
- salt and pepper to taste
