- 1 Medium Onion finely diced

- 1 tablespoons Tomato Paste
- 3-4 Garlic Cloves minced
- ½ teaspoon Ground Cumin
- ½ teaspoon Dried Oregano
- 1 pound Smoked Pork like smoked ham shanks or ham hocks, rinsed
- 4 cups Water
- 4 cups Chicken Broth
- 1 Bay Leaf
- 1 Medium Potato peeled and cut into 1-2 inch pieces
- 1 pound Pumpkin peeled, seeded and cut into 1-2 inch pieces
- Salt to taste
- Black Pepper to taste
