Ingredients
- 1/2 x small pomelo
- 1 cup cucumber slices
- 3 cup Shredded Cabbage
- 1 cup shredded carrots
- 2 x breasts of roasted duck, shredded
- Handful of mint and Thai basil - or regular basil
- 3 tbsp roasted peanuts, chopped
- 2 tbsp fish sauce
- 1 1/2 tbsp fresh lime juice
- 1 tbsp water
- 1 1/2 tbsp sugar
- 1 tsp minced chilies - I omitted the chilies in my salad cuz the kids were also eating it
