- 2 pounds bone-in chicken legs, thighs and drumsticks separated, skin removed

- 3–4 hot Indian green chiles, or 1 serrano pepper, roughly chopped
- 1 bunch fresh cilantro, very roughly chopped (about 2 packed cups)
- 1 bunch fresh mint leaves (about 2 packed cups)
- 3 tablespoons whole milk plain yogurt
- 2 cups basmati rice, rinsed well
- 2 tablespoons neutral oil, like grapeseed or canola
- 1 large white or yellow onion, very thinly sliced
- 1/2 teaspoon cumin seeds
- 3 green cardamom pods
- 6 whole cloves
- 1 tablespoon bay leaf
- 1/2 stick cinnamon, broken in 2 pieces
- 3 tablespoons warm milk (optional)
- 1 pinch saffron (optional)
