  • 2 1⁄2 ounces broccoli florets, cut through their stems into thin slices (1 cup)
  • 1 lb napa cabbage or 1 lb kale
  • 2 ounces jicama, peeled & cut into 2-inch-by-1/4-inch strips
  • 2 ounces bamboo shoots, drained rinsed & finely shredded
  • 1 tablespoon peanut oil or 1 tablespoon bacon fat
  • 1 tablespoon fresh ginger, peeled & grated
  • water (if needed)
  • 1 1⁄2 teaspoons sesame oil
  • Sauce
  • 2 teaspoons rice wine or 2 teaspoons dry sherry
  • 4 teaspoons light soy sauce
  • 2 teaspoons dark soy sauce
  • 1 teaspoon hawaiian salt
