Ingredients
- 2 tbsp olive oil
- 3 tsp garlic, minced
- 1/2 Vidalia onion, diced
- 1/2 c white wine (dry)
- 1 cup rice (I used Basmati)
- 3 c vegetable broth (I used Trader Joe's low sodium)
- 1 red bell pepper, diced
- 1 c asparagus tips
- 1 c mushrooms, diced
- 1 can chickpeas, drained & rinsed
- 3 tsp cumin
- 2 tsp Spanish paprika
- 1/4 tsp saffron threads, soaked in 1/2 c boiling water for 5 minutes. Salt & pepper to taste
