  • 1/2 Vidalia onion, diced
  • 1/2 c white wine (dry)
  • 1 cup rice (I used Basmati)
  • 3 c vegetable broth (I used Trader Joe's low sodium)
  • 1 red bell pepper, diced
  • 1 c asparagus tips
  • 1 c mushrooms, diced
  • 1 can chickpeas, drained & rinsed
  • 3 tsp cumin
  • 2 tsp Spanish paprika
  • 1/4 tsp saffron threads, soaked in 1/2 c boiling water for 5 minutes. Salt & pepper to taste
