- ¾ cup unsweetened shredded coconut
- ¼ cup light brown sugar
- ⅓ cup honey or pure maple syrup
- ⅓ cup canola oil
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon kosher salt
- ½ tablespoon vanilla extract
- ¾ cup dried fruit, such as cranberries, apples, raisins, apricots and/or mangoes, chopped if needed
