- 3 small heads endive, thinly sliced (about 1 cup)

- 4 Medjool dates, pitted and chopped
- 1/2 cup walnuts, toasted and roughly chopped
- 8 thin slices prosciutto
- Shaved gorgonzola cheese, for topping
