Chicken Liver Terrine with Chipotle and Raisins
Ingredients
- 3 teaspoons of unflavored gelatin
- 1/3 cup of cold water
- 8 ounces of butter, at room temperature, and divided
- 1 pound of chicken livers
- 1/2 cup of good port
- 3/4 cup of raisins
- 1 bottle of dark beer (Newcastle works great)
- 1/4 cup of malt vinegar
- 1 teaspoon of chipotle powder
- 2 teaspoons of salt
