- 1 teaspoon vanilla
- Roasted pineapple (optional):
- 1 large, ripe pineapple, peeled, quartered lengthwise and core removed
- 4 tablespoons unsalted butter, melted
- 3/4 cup light brown sugar
- Rum syrup:
- 2 cups water
- 1 cup granulated sugar
- 1/3 to 1/2 cup dark rum (to taste)
- Apricot glaze:
- 1/2 cup strained apricot jam
- 1 tablespoon dark rum
- Sweetened whipped cream:
- 1 cup heavy cream
- 1 tablespoon granulated sugar
