- 1 1/2 pounds ripe but firm Bosc or Bartlett pears, (about 3 large)
- 1 (3/4-inch) piece ginger
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon room-temperature water
- 1 teaspoon ground cinnamon
- 1/4 cup old-fashioned rolled oats
- 5 teaspoons olive oil, divided
- 1 tablespoon unsalted butter or ghee
