Ingredients
- 1 ½ pounds undyed smoked haddock fillets, pin bones removed
- 1 medium onion or 1 bunch of spring onions , finely chopped
- 1 clove of garlic , peeled and finely chopped
- 1 small conatiner natural plain yogurt
- ½ cup butter
- 2 tomatoes , deseeded and chopped
- thumb-sized piece of fresh ginger , grated
- 1 red chili , deseeded and finely chopped
- a large bunch of fresh coriander , leaves picked and roughly chopped
- 1 tablespoon mustard seeds
- 6 ounces long grain or basmati rice
- 2 eggs , preferably free-range or organic
- juice of 2 lemons
- 2 fresh bay leaves
- 2 heaped tablespoons curry powder
