Ingredients
- 2 eggs, preferably free-range or organic
- 1 ½ pounds undyed smoked haddock fillets, pin bones removed
- 2 fresh bay leaves
- 6 ounces long grain or basmati rice
- ½ cup butter
- Thumb-sized piece of fresh ginger, grated
- 1 medium onion or 1 bunch of spring onions (scallions), finely chopped
- 1 clove of garlic, peeled and finely chopped
- 2 heaped tablespoons curry powder
- 1 tablespoon mustard seeds
- 2 tomatoes, deseeded and chopped
- Juice of 2 lemons
- A large bunch of fresh coriander (cilantro), leaves picked and roughly chopped
- 1 red chili, deseeded and finely chopped
- 1 small container natural plain yogurt
