  • 2 cups neutral oil for frying shallots (canola, vegetable, or peanut)
  • 1 head Romaine lettuce
  • 3 oranges (a combination of navel, blood, and cara cara oranges make a very pretty salad)
  • For the dressing:
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons mint, chopped
