Ingredients
- 2 tsp dried unsweetened coconut
- 3 tsp vegetable oil
- 1/3 cup raw cashew halves
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 inch piece fresh ginger, peeled and minced
- 2 x hot green chilies, minced
- 2 tsp brown mustard seeds
- 1/2 tsp ground cumin
- 5 x curry leaves
- 1 medium carrot, chopped
- 1/2 cup frozen peas
- 2 medium tomatoes, chopped
- salt, to taste
- 500 ml leftover cooked grain of your choice or 1 cup uncooked, boiled in plenty of salted water until chewy-soft
- 500 ml salted water
- 1 handfull fresh cilantro/coriander, chopped
- 1 ml lemon juice
