Ingredients
- 3 - 4 cups Okra chopped in 1/2" - 3/4" chunks
- 1 Yellow Onion (medium - large size) diced
- 7 ounces Canned Diced Tomatoes (1/2 can)
- 1 1/2 tablespoons Fresh ground or finely chopped ginger
- 1 tablespoon Madras Curry Powder
- 5 Roasted New Mexico Hot Green Chiles *
- 1 tablespoon Cumin Seeds
- 1 tablespoon Kashmiri or Indian Red Chile Powder *
- 1 teaspoon Garam Masala
- 1 teaspoon Coriander Powder
- 1 teaspoon Turmeric Powder
- 1 teaspoon New Mexico X-Hot Red Chile Powder *
- 1 teaspoon Mustard Oil (if you have it, or sub Olive Oil)
- 1 teaspoon Olive Oil (you can use more but we try to keep it light)
