Ingredients
- Gazpacho
- 2 pounds ripe tomatoes, any size, any variety (it’s especially great with a variety of heirloom tomatoes)
- 1 cucumber
- 1 green pepper
- 1 onion
- 2 cloves garlic
- 1 jalapeno pepper (optional)
- 1 1/2 teaspoons Kosher salt
- 1 tablespoon sherry vinegar
- 1/2 to 1 teaspoons crushed red pepper flakes (to taste)
- 1 slice rustic white bread, torn into 1" pieces
- 3/4 cup Spanish extra-virgin olive oil
- Garnish
- 12 cherry or grape tomatoes, quartered
- 1 cucumber, peeled, seeded and diced
- 1/2 green pepper, peeled, seeded and diced
- 4 green onions, sliced
- 4 chives, diced
- 1-2 slices rustic white bread, torn into 1" pieces
- 2 tablespoons Spanish extra-virgin olive oil
