Ingredients
- ½ oz. dried porcini mushrooms
- 2 lb. beef chuck, cut into 2" pieces

- 1 medium onion, peeled and diced
- 2 medium carrots, peeled and diced
- 2 cloves garlic, peeled and chopped
- 2 large plum tomatoes, peeled, seeded, and roughly chopped
- 1 stalk celery, diced
- 1 bouquet garni (1 bay leaf and 1 sprig each flat-leaf parsley and thyme, tied in a bundle with kitchen string)
- 1 tbsp. flour
- 2 cups dry red wine
- Freshly ground black pepper
