Ingredients
- 3 ripe large tomatoes or 9 ripe plum tomatoes
- 3 tablespoons extra virgin olive oil
- Freshly ground black pepper to taste
- 2 tablespoons unsalted butter
- 2 tablespoons peanut oil
- 6 chicken thighs, bone in and skin on, but trimmed of any fat
- Salt to taste
- 1 cup finely chopped yellow onion
- 1 cup finely chopped celery
- 1/2 teaspoon minced garlic
- 2 cups uncooked converted long-grain white rice (I use Uncle Ben's)
- 4 cups chicken stock
- 1 large sprig fresh thyme
- 2 small bay leaves
- 2 teaspoons Tabasco sauce
