Ever wonder what to do with the stalk of the broccoli and don’t want to put it in a soup?! Put it in a dressing! It will never have to go to waste again. This dressing is really simple and can also be used as a dipping sauce. I love being able to utilize the entire vegetable. If it’s edible, you can always do something with it.
Green Goddess Salad Dressing
1 cup broccoli stalk
1/3 cup chopped parsley
1/4 cup chopped cilantro
2 garlic cloves
1/3 cup lemon juice
3 tablespoons tahini
1 cup water
2 tablespoons apple cider vinegar
1 1/4 teaspoon salt
1/4 teaspoon black pepper
pinch cayenne
Peel the broccoli stalk and cut it into large cubes. Wash the cilantro and parsley and include the stems of these herbs when chopping. In a blender, add the broccoli stalk, parsley, cilantro, tahini, garlic, water, lemon juice, apple cider vinegar, black pepper, cayenne and 1 teaspoon of salt. Blend until smooth. If more salt is needed, add the 1/4 teaspoon. Adjust taste with lemon juice and salt.
