- 8 ounces applewood-smoked bacon
- 1/4 cup minced garlic
- 1 sweet onion, small dice
- 2 1/2 pounds stew beef
- Salt and pepper
- 1/4 cup apple cider vinegar
- 1/2 cup all-purpose flour
- 12 ounces dark ale beer (not hoppy)
- 2 tablespoons Dijon mustard
- 2 tablespoons sirop de Liege (see Cook's Note)
