- 18 tablespoons (255g) unsalted European-style butter, cut into 1/2-inch cubes, divided
- 1 cup (240ml) cold whole milk
- All-purpose flour, as needed
- For the Cream Cheese Filling:
- 8 ounces (226g) cream cheese, softened
- 1 large egg yolk (18g)
- 1/4 cup powdered sugar, sifted, plus more for garnish (about 1 ounce; 30g)
- 1/2 teaspoon fresh lemon juice (from 1 lemon)
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
