- 1 fresh very hot chili pepper, such as habanero or Scotch bonnet
- 1/3 cup oil (50:50 avocado oil and red palm oil, or all avocado oil)
- Few sprigs fresh thyme or 1/2 teaspoon dried thyme
- 2 1/2 cups chicken or vegetable stock
- 2 teaspoons curry powder
- 2 teaspoons paprika
- Fine sea salt
- 1/2 pound fresh ginger
- 1/3 pound (about 30 cloves) garlic cloves
- 1/2 teaspoon fine sea salt
