- 2 teaspoons wholegrain mustard
- 1/8 teaspoon black pepper, freshly ground
- 1/8 teaspoon cayenne pepper
- 1 pinch ground cinnamon
- 1 pinch ground cardamom
- 1 pinch ground ginger
- 1/2 cup dry white wine
- 6 cups good vegetable broth*
- 3/4 cup heavy cream
- 1 handful finely chopped flat-leaf parsley
