- 2 large shallots, finely chopped, or 1 medium onion, finely chopped
- 4 tablespoons olive oil
- 2 teaspoons fresh thyme, chopped (or 1 tsp. dried thyme)
- 1 tablespoon soy sauce
- Ground Salt and ground pepper to taste
- 1 cup your choice of currants or raisins
- 3/4 cup your choice of dried fruit - chopped dates, figs, or apricots, or a combination
- 3/4 cup toasted almond slivers (you may also use chopped pistachios, toasted walnuts, toasted cashews, or toasted hazelnuts
